Pale golden yellow, bright and crystalline in appearance.
On the nose
Aromatic and inviting, with pronounced quince paste, hawthorn blossom, and verbena. Secondary mineral notes emerge as the wine opens, suggesting the limestone-rich terroir beneath.
In the mouth
Round and generous, with considerable weight and texture. The palate shows ripe stone fruit balanced by crisp acidity, leading to a long, saline finish with persistent mineral grip.
I recommend this wine with anchovy-based dishes, tartare of sea bream, or Thai-style prawn salads where its mineral freshness cuts through richness beautifully. Domaine des Roches Neuves is a wine estate in the Saumur-Champigny appellation (Loire Valley), run by Thierry Germain. Around 28 hectares farmed biodynamically. Main grapes: Cabernet Franc (reds) and Chenin Blanc (whites). Limestone tuffeau soils. Cuvées: Terres Chaudes, Marginale, Franc de Pied. Wines of great precision and fine depth.
