Breeding
Mixed ageing in stainless steel and part French oak barrels to refine the tannins without excessive wood influence on the wine
On the eye
Deep cherry-red with garnet reflections. Intense and sustained colour throughout.
On the nose
The initial bouquet reveals concentrated red fruit aromas, evolving towards stewed fruit character with notes of black olive and toasted bread. Layered and evolving.
In the mouth
Powerful and well-balanced on the palate. Dark berry fruits dominate, with a subtle liquorice note on the finish. Structured tannins support the fruit without dominating.
M. Francois
A wine of sufficient structure and depth to accompany game dishes with confidence. The 2021 would prove particularly rewarding alongside venison or wild boar preparations, where its power and savoury undertones will find natural expression.

Nicolas françois, propriétaire passionné des halles de quercamps

CHATEAU PUECH-HAUT

Set on the argilo-calcaire slopes and rolled-pebble soils of Saint-Drézéry, north-east of Montpellier, Château Puech-Haut farms 150 hectares in organic conversion within the Languedoc appellation. Founded in 1980 by Gérard Bru on what was once dense garrigue and olive groves, the estate has steadily established itself as one of the region's most consistent addresses, blending Syrah, Grenache and Mourvèdre for its reds, and Roussanne, Marsanne and Viognier for its whites. At Halles Quercamps, we have selected this estate for the coherence of its range, the precision of its assemblages, and the fresh momentum brought since 2024 by incoming managing director Arnaud Demongeot. A reliable, characterful choice for those who want the Languedoc at its most complete.
