In the mouth
The palate combines character with refinement. Vigorous tannins frame the fruit, whilst good acidity provides definition. The finish is long and persistent, with a savoury, mineral quality that lingers.
On the nose
Expressive and layered, the bouquet unfolds with dark stone fruit, garrigue, and mineral notes. There is considerable promise here—a wine that rewards patient nosing and suggests further development in bottle.
On the eye
Deep garnet, with the density and colour intensity that speaks to the wine's concentration and age-worthiness.
Breeding
14 months in large oak vat

This is a wine of genuine substance, best appreciated with food of similar stature. A spiced beef dish—perhaps a richly seasoned côte de boeuf—would be an ideal pairing, allowing the wine's structure and depth to shine. The wine's tannins and dark fruit will complement the meat's richness whilst the mineral character cuts through the sauce beautifully.

Domaine Gauby is a wine estate in Calce (Pyrénées-Orientales), Roussillon. Run by Gérard and Ghislaine Gauby. Around 45 hectares farmed biodynamically. Grapes: Grenache, Carignan, Syrah, Mourvèdre, Macabeu. Appellations: Côtes du Roussillon Villages, IGP Côtes Catalanes. Cuvées: Muntada, Vieilles Vignes, Coume Gineste. One of the great names of Roussillon.
