Breeding
Cyril Cailleau favours élevage in stainless steel or oak barrels (depending on the cuvée) to refine the structure whilst preserving the purity of the fruit
On the eye
Intense golden yellow with brilliant clarity
On the nose
In youth: white flowers (acacia), fresh honey, exotic fruit (mango, pineapple). With age: candied fruit, quince paste, dried apricot, subtle beeswax and toasted notes.
In the mouth
Unctuous, velvety attack revealing ripe fruit richness. The domaine's signature lies in balance: the Chenin's natural acidity counterpoints residual sugar, avoiding heaviness. Long finish of honey and orange zest.

Consider this cuvée alongside foie gras in place of the traditional Sauternes. The wine's acidity cuts through richness whilst its honeyed sweetness complements the delicate flavour of the liver, creating an unexpectedly harmonious pairing that rewards experimentation.

DOMAINE DE LA DUCQUERIE

Domaine de la Ducquerie is a wine estate in the Saumur-Champigny appellation (Loire Valley). Main grape: Cabernet Franc. Limestone tuffeau soils typical of the Left Bank of the Loire. The wines express the fruit and freshness characteristic of the appellation, with fine tannins and bright vivacity. Available at Les Halles de Quercamps.
