Fruit-driven, fresh and generously flavoured

  • A wine conceived for convivial summer evenings with friends. Its bright acidity and approachable character make it ideal for relaxed outdoor gatherings, whether casual suppers or informal entertaining.
  • The palate reveals an intriguing interplay of white pepper and cocoa in the finish, adding complexity and depth to the wine's primary fruit expression. These savoury notes distinguish it from more straightforward examples of the appellation.
  • This wine's structure and freshness make it a natural companion to grilled meats and charred vegetables. The peppery spice complements barbecued fare without overwhelming the food.

In the mouth
The palate is round and generous, with a natural amplitude that speaks to the vintage's ripeness. Bright acidity lifts the mid-palate, lending freshness and vibrancy throughout. The finish is clean and persistent.
On the nose
The bouquet opens with aromas of damson and blackberry, followed by white pepper and warm spice. The nose is clean and inviting, reflecting the wine's organic provenance and careful vinification.
On the eye
Deep purple in colour, with the density and hue characteristic of well-ripened fruit.
M. Francois
This wine demonstrates the quality increasingly evident in organic Languedoc-Roussillon reds. Its balance of ripe fruit, natural acidity and savoury spice makes it an excellent choice for grilled fare. The 2024 vintage shows good concentration without heaviness, a hallmark of thoughtful winemaking in the region.

BORIE DE MAUREL

Borie de Maurel is established at Félines-Minervois, on the lower slopes of the Montagne Noire, farming 35 hectares of clay-limestone and schistous soils under certified organic management. Founded in 1989 by Michel Escande — a former sailing instructor turned vigneron — the estate swiftly became one of the most respected names in Minervois, earning international press recognition for its cuvée Sylla as early as the 1990s. At Halles Quercamps, we have selected this estate for the precision of its blends, the honest expression of its contrasting terroirs, and the rigour with which the Escande family has pursued organic viticulture across three decades. A reliable address for anyone seeking Minervois at its most accomplished.
