Breeding
Approximately 12 months on fine lees to stabilise the wine whilst retaining its ethereal character.
On the eye
Pale yellow with silvery highlights
On the nose
Citrus zest and pink grapefruit dominate, with delicate white floral notes emerging as the wine opens. A clean, inviting bouquet characteristic of the appellation.
In the mouth
A crisp, well-defined attack followed by pronounced mineral notes. The palate shows good tension and length, with the characteristic flinty character of Chablis terroir.
Versatile and food-friendly. Excellent as an aperitif, and equally at home alongside oysters, white fish, or lighter seafood preparations. The mineral backbone makes it a natural companion to shellfish, whilst its freshness suits poultry and vegetable-based dishes. A wine of genuine utility for the discerning table.

Domaine Billaud-Simon is a wine estate in Chablis (Burgundy). Founded in 1815. Around 20 hectares of vines. Grape: Chardonnay. Appellations: Chablis, Chablis Premier Cru (Mont de Milieu, Montée de Tonnerre, Vaillons), Chablis Grand Cru (Les Clos, Vaudésir, Blanchots, Les Preuses). Acquired by Faiveley in 2014. Wines of great minerality and fine tension.
