Breeding
Aged 40% in oak barrels for 12 to 16 months.
On the eye
Deep garnet robe with violet highlights. Dense, youthful colour suggesting good concentration and structure.
On the nose
The bouquet is initially reserved but reveals depth and elegance on aeration. Dark cherry, slate, and a whisper of garrigue emerge, with no heaviness—a wine of restraint and complexity.
In the mouth
Powerful on the palate with ripe cherry and dark chocolate notes, yet the structure remains refined. The tannins are well-integrated, and the finish extends with grace and balance—a wine built for the table.

I find Château d'Aussières a natural companion to game and rich preparations. Duck confit, in particular, finds an ideal partner here: the wine's dark fruit and subtle earthiness complement the richness without overwhelming it. A wine for thoughtful drinking, not mere consumption.
