Maturation in barrels for 30% over one year, élevage in vat for the remainder
On the eye
Deep garnet robe with considerable intensity and clarity
On the nose
Aromatic complexity unfolds gradually: Kampot pepper and liquorice are joined by subtle mineral notes and hints of wild herbs characteristic of the garrigue.
In the mouth
Generous yet refined on the palate. Red fruit—particularly strawberry—mingles with liquorice and white pepper. The mineral backbone provides structure; the finish is long and composed.
This wine reveals its true character when paired with charcuterie and cured meats, where its acidity and mineral quality cut through richness with elegance. Equally suited to Mediterranean fare and rustic cheese boards. Drink now through 2027.
