In the mouth
Firm opening with well-integrated tannins that are fine-grained rather than aggressive. The mid-palate shows good depth, leading to a persistent finish with lingering fruit character.
A classic food wine. Pair with roasted or grilled red meats, beef stews, or game. The structure and acidity make it equally suited to richer preparations such as beef en daube. Decant thirty minutes before service to allow the tannins to soften.
