In the mouth
The attack is clean and direct, with a refreshing acidity that carries through the palate. The mid-palate reveals good structure and a pleasant dark fruit character that resonates agreeably with the toasted, empyreumatic notes from the nose.
On the nose
Forthright bouquet combining warm spice—clove and black pepper—with toasted, roasted notes. The aromatic profile suggests careful élevage in wood without dominating the fruit.
On the eye
Deep ruby to garnet. The colour is notably concentrated, suggesting good extraction and ripe fruit at harvest.
Breeding
60% of the wine is aged in oak, 40% in stainless steel
A wine of substance suited to robust fare. Consider it alongside a Flemish beef stew, aged Angus picanha, or a mature sheep's milk tomme. The tannin structure and acidity provide the necessary counterpoint to rich, savoury dishes.

CHATEAU FONTARECHE
Set on the high alluvial terraces of the Aude at Canet-d'Aude, Château Fontareche covers 140 hectares within the Corbières appellation, on characteristic soils of gravel and rounded stones. The estate's vines are documented as far back as 1350, under the archbishopric of Narbonne — and in 1682, the property passed to Pierre Mignard, portrait painter to Louis XIV, whose direct descendants, the de Lamy family, have remained at the helm ever since, resuming active management in 2008. At Halles Quercamps, we have selected this estate for the depth of its gravelly terroir, the coherence of its plantings — Carignan, Syrah, Mourvèdre, Grenache, Roussanne — and the consistency of its red, white and rosé Corbières across vintages. A wine of genuine character, firmly rooted in the Aude.
