In the mouth
The attack is direct and well-structured. Fine-grained tannins provide backbone without harshness, whilst the finish extends with good length and composure. A wine of balance and breeding.
On the nose
The bouquet reveals ripe blackberry and plum, layered with white pepper and garrigue notes. Subtle oak influence adds a light toasted dimension without dominating the fruit-forward character.
On the eye
Deep crimson with brilliant clarity; a wine of good concentration and visual appeal.
Breeding
80% of the wine is aged in new French oak from four different coopers, with 20% aged in stainless steel.
M. Francois
Serve with veal sweetbreads and morels, pork fillet, or roasted lamb. The wine's structure and acidity make it an excellent companion to aged Pont-l'Évêque and similar washed-rind cheeses. Decant thirty minutes before service to allow the wine to open fully.
