In the mouth
The attack is clean and direct, with a refreshing acidity that carries through the palate. The mid-palate reveals ripe dark fruit in harmony with toasted, slightly smoky notes. The finish is sustained and balanced, with the wine's structure evident throughout.
On the nose
The bouquet is forthright and layered, with warm spice and toasted oak creating an inviting aromatic profile. Notes of roasted nuts and dried herbs emerge beneath the primary fruit expression.
On the eye
Deep ruby, almost black in its intensity. A colour that speaks to ripe fruit and careful extraction.
Breeding
60% of the wine is aged in oak, 40% in stainless steel

This wine pairs admirably with robust dishes: a traditional carbonade flamande, properly aged Angus beef, or aged sheep's cheese would all find excellent accord. The wine's tannin structure and acidity make it sufficiently versatile for both casual and more considered dining occasions.
