In the mouth
The attack is honeyed and supple, then the wine shifts to reveal its backbone: bright acidity, zesty minerality, and a clean, lingering finish. Elegant restraint throughout.
On the nose
Citronella and pomelo lead, with white apple and subtle orchard fruit notes. The aromatics are fresh and inviting, without heaviness or oxidative character.
On the eye
Pale golden straw, bright and luminous
Breeding
Fermentation for ten to twenty days under temperature control. The wine is aged on lees until bottling.

Versatile at table. Serve as an aperitif, or alongside poultry, risotto, white fish, escargots, and goat's cheese. The wine's natural acidity and mineral frame make it a natural partner to a wide range of dishes. Chill lightly and enjoy within three to four years of vintage.

CHÂTEAU DE LA GREFFIÈRE

Established on the rolling hillsides of La Roche-Vineuse in Saône-et-Loire, Château de la Greffière farms 65 hectares of certified organic vines across clay-limestone and clay-siliceous soils in the Mâconnais. A viticultural estate since 1585, it has been in the Greuzard family since 1924; in 2012, Xavier Greuzard took the helm and nearly doubled the vineyard from 35 to 65 hectares, sharpening a clear commitment to quality. At Halles Quercamps, we have selected this estate for the rigour of its organic viticulture, the breadth of its grape varieties — Chardonnay, Aligoté, Pinot Noir, Gamay — and the consistency of its white, red, and sparkling wines across the Mâcon appellation. A historic estate with its feet firmly in the Mâconnais, and its eyes fixed on precision winemaking.
