In the mouth
The palate is ample and juicy, with a gourmand character that reflects the fruit-forward nature of the vintage and selection. The finish is long and persistent, with fine tannin grip supporting the overall structure.
On the nose
The bouquet opens with red and dark berry fruit—cherry and plum—complemented by discreet spice notes and a whisper of vanilla from élevage. The aromatics are clean and well-defined.
On the eye
Deep purple, with good colour intensity. The appearance suggests ripe fruit and careful winemaking.
Breeding
Ageing in oak barrels for 18 to 24 months
Since 2005, Arôme de Pavie has been the new designation for what was formerly Château Tour Simard. This change marked a strategic refinement of the Pavie portfolio, allowing the house to produce a second wine of genuine distinction. I have always found it a reliable expression of the appellation—never pretentious, always well-made.
