In the mouth
The attack is supple and fruit-forward, with red berry character and subtle spice. The mid-palate develops with good concentration, whilst the finish remains clean and persistent.
On the nose
Lifted aromatics of red cherry and wild herbs, with floral notes that add complexity. A hint of game leather suggests the wine's capacity to age gracefully.
On the eye
Intense ruby, with good depth of colour suggesting ripe fruit and structure.
Breeding
Large and small oak casks. 30 months' ageing
M. Francois
An excellent match for game dishes, particularly venison and wild boar. The wine's structure and tannin profile complement the richness of these meats beautifully. Also consider it with duck confit or well-seasoned beef preparations.

Domaine Gauby is a wine estate in Calce (Pyrénées-Orientales), Roussillon. Run by Gérard and Ghislaine Gauby. Around 45 hectares farmed biodynamically. Grapes: Grenache, Carignan, Syrah, Mourvèdre, Macabeu. Appellations: Côtes du Roussillon Villages, IGP Côtes Catalanes. Cuvées: Muntada, Vieilles Vignes, Coume Gineste. One of the great names of Roussillon.
