Breeding
Aged in oak barrels for 16 months.
On the eye
Deep ruby red with good intensity and clarity
On the nose
Cassis and blackcurrant lead, accompanied by liquorice and dried fig. Secondary notes of cedar and graphite emerge with air, suggesting classical Pauillac structure.
In the mouth
The palate displays admirable equilibrium. Ripe dark fruits are supported by well-integrated tannins and fresh acidity, creating a wine of considerable length and finesse.

A natural companion to beef dishes, particularly those with sauce—a classic pairing. The wine's structure suits braises and ragûs well, where its tannins complement the richness of slow-cooked preparations. Decant an hour before service to allow the wine to open fully.

CHATEAU PONTET-CANET

Set on the plateau of Pauillac overlooking the Gironde estuary, Château Pontet-Canet is a 5th Grand Cru Classé 1855 of 81 hectares, planted on deep Günzian gravels. Founded in 1705 by Jean-François de Pontet, Governor of the Médoc, the château passed to the Tesseron family in 1975 and is today led by Justine Tesseron — who has made it the first and only classified growth in the Médoc to hold full organic and Demeter biodynamic certification. At Halles Quercamps, we have selected this château for the rigour of its biodynamic commitment and the precision of its reds, where Cabernet Sauvignon gives full voice to the minerality of Pauillac's gravels.
