In the mouth
Blackcurrant and dark cherry notes are complemented by fine-grained tannins. A whisper of tonka bean adds subtle complexity to the finish, without overwhelming the wine's essential elegance.
On the nose
Aromas of dark berries and wild fruits dominate, with subtle herbaceous undertones characteristic of the limestone terroir of Castillon.
On the eye
Garnet, with good depth of colour
Breeding
12 to 14 months, 60% in new oak barrels, 40% in one-year-old oak barrels
M. Francois
This wine pairs beautifully with charcuterie and cured meats, where its acidity and fruit-forward character provide excellent balance. It is equally at home with roasted game or beef dishes. Drink now or hold for five to seven years, during which the tannins will integrate further and secondary flavours will develop.
