In the mouth
Blackcurrant and small dark fruits dominate the palate, with a subtle hint of tonka bean adding warmth and texture. The wine shows good structure and a clean, persistent finish.
On the nose
Aromas of dark berries and wild fruit, with the characteristic mineral undertones of the Castillon terroir. The bouquet is restrained and elegant rather than ostentatious.
On the eye
Deep garnet
Breeding
12 to 14 months, 60% in new oak barrels, 40% in one-year-old oak barrels
M. Francois
This is an ideal companion to a selection of cured meats and charcuterie, where its acidity and fruit-forward character will complement the richness of the board. It would also serve well alongside roasted poultry or lighter game dishes. Approachable now, yet with sufficient structure to reward cellaring for a further five to seven years.
