Breeding
Ageing on lees: minimum 3 to 4 years in cellar
On the eye
Pale golden colour with greenish glints. Fine, persistent mousse.
On the nose
White flowers dominate—acacia and elderflower are particularly evident—with underlying citrus and a hint of brioche from the ageing on lees. The bouquet is restrained and refined.
In the mouth
Considerable freshness and tension. The palate is dry, mineral-driven, with good acidity that carries the white fruit flavours through to a clean, persistent finish. Structure and elegance in equal measure.

I recommend this Champagne as an aperitif without hesitation, but it truly excels alongside shellfish—scallop carpaccio, lobster, oysters. The mineral precision and citrus backbone cut through the richness of these dishes with particular grace. A thoroughly professional Blanc de Blancs.

The Houry family has cultivated this small holding across several generations, working Chardonnay and Pinot Noir to produce grower Champagnes of genuine terroir character.
