Breeding
Ageing on lees: Exceptional, often a minimum of 6 to 8 years
On the eye
Golden robe with fine, persistent bubbles. Pale and luminous.
On the nose
Restrained and precise on the nose. White flowers, brioche, and a distinctive chalky minerality. The bouquet develops gradually, revealing subtle citrus notes and a hint of hazelnut.
In the mouth
Dry and mineral-driven on the palate, with a firm structure and excellent length. The Extra Brut character allows the saline, flinty notes to dominate. A wine of personality and definition, finishing clean and persistent.

Based in Ambonnay, one of Champagne's seventeen Grand Cru villages on the Montagne de Reims, Champagne Thierry Houry tends just 2 hectares of chalk-rooted vines at the heart of the appellation. The Houry family has cultivated this small holding across several generations, working Chardonnay and Pinot Noir to produce grower Champagnes of genuine terroir character. At Halles Quercamps, we have selected this House for the precision of its Grand Cru parcels, the typicity of Ambonnay's chalk soils, and the integrity of a family operation working at truly human scale. These are grower Champagnes that speak first and foremost of their village, far removed from the blended anonymity of large-scale négoce.
