A family rooted in the Loire
Pascal Jolivet's family had been active in Loire négociant trade since 1926, accumulating decades of knowledge about the appellation's vineyards and soils before the estate was formally created. When Pascal Jolivet established the domaine in 1993, he built something distinctly his own: a producer-led estate with full control over viticulture and winemaking, centred on Bué-en-Sancerre in the Cher.
The estate's rise was swift. By 1995 and again in 1996, the Wine Spectator placed the Sancerre Blanc in its annual top 100 — recognition that brought international attention to the domaine at a time when the appellation was still finding its footing on the world stage.
Terroir: limestone, clay and flint across 120 hectares
Domaine Pascal Jolivet works across three principal soil types: calcaire (pure limestone), argilo-calcaire (clay-limestone), and silex (flint). Limestone soils yield freshness and delicacy; clay-limestone adds weight and texture; flint imparts the smoky, gunflint minerality that defines Sancerre's most sought-after whites. With 120 hectares under vine, the estate blends or bottles separately according to each cuvée.
Both permitted varieties are cultivated: Sauvignon Blanc for whites and rosés, and Pinot Noir for reds and a portion of the rosé. The Loire's cool continental climate preserves natural acidity in the whites and encourages the elegant, lighter-framed style that characterises Sancerre rouge at its best.
Winemaking: precision in service of terroir
The philosophy at Domaine Pascal Jolivet is one of restraint and precision. Temperature-controlled fermentation preserves aromatic freshness, while careful élevage — adapted to each cuvée — ensures mineral definition in the finished wine. The house style is recognisably Sancerre: taut, focused, driven by fruit and mineral tension rather than oak or weight.
