It is this subsoil that gives the estate's Sauvignon Blancs their characteristic tension and salinity, and lends even the Pinot Noir and Pinot Gris a mineral precision rarely found at this latitude.

Nearly nine decades of history, three defining chapters

The estate was established in 1935 by Camille Rousseau, whose family cultivated these slopes for several decades. The decisive turning point came in the early 1990s, when Denis Jamain acquired the property and embarked on a thorough conversion to biodynamic farming — a commitment recognised by Demeter certification in 2011. In 2022, Joseph and Marie de Maistre — previously associated with the Prieuré de Saint Céols — took over the estate, bringing fresh energy while preserving the biodynamic rigour that Jamain had established.
