Founded by an agronomist, carried forward with new ambition

Château Jolys was established in 1964 by Pierre-Yves Latrille, a trained agronomist, at Gan in the Pyrénées-Atlantiques. Over the following decades he built the estate into a benchmark for AOC Jurançon, rooted in terroir rather than fashion. In 2019, Québécois entrepreneur Michel Boutin acquired the property, honouring Latrille's foundations while investing in its future. At 40 hectares, it is today the largest independent estate in the AOC Jurançon — a scale that brings both opportunity and responsibility.

Terroir: Pyrenean slopes and a singular soil

The vineyards occupy south-facing coteaux at Gan, oriented towards the Pyrenean chain. This exposure is essential for ripening Petit Manseng and Gros Manseng, which need warmth and light to develop their richness and aromatic complexity. Soils are silico-clayey, interspersed with rounded galets that drain well and retain heat. The Pyrenees also generate a specific microclimate: cool nights preserve acidity and freshness, creating the tension between richness and freshness that defines the finest Jurançon whites.

Winemaking: precision at scale

The estate produces both dry and sweet whites under AOC Jurançon. Petit Manseng provides concentration and late-harvest potential for the moelleux; Gros Manseng contributes freshness and volume to the dry expressions. The approach prioritises fruit integrity and terroir specificity, without heavy-handed intervention, yielding a range that is coherent and true to the Sud-Ouest.

The wines of Château Jolys

The estate works exclusively with the two traditional varieties of the appellation:

  • Jurançon Sec — dry whites from Gros Manseng and Petit Manseng, showing citrus, white peach and mineral freshness.
  • Jurançon (moelleux) — sweet whites from late-harvested Petit Manseng, with depth, richness and fine natural acidity.
