List of products by brand CHATEAU D'AUSSIERES
On the outskirts of Narbonne, in the heart of the Aude, Château d'Aussières represents one of the most considered expressions of the Corbières appellation: 167 hectares of vines planted on stony and sandy sandstone soils, arranged in a natural south-facing amphitheatre at the foot of the Fontfroide hills, under the stewardship of Domaines Barons de Rothschild (Lafite).
A Cistercian grange reborn as a serious wine estate
The history of Château d'Aussières is rooted in the monastic world. The estate was originally an agricultural grange belonging to the abbey of Fontfroide, one of the great Cistercian foundations of the Languedoc. By 1920, the property had grown to an impressive 270 hectares of vines — a scale that speaks to its historical importance in the region. Over the following decades, however, the estate fell into decline, its vineyards fragmented and neglected.
The turning point came in 1999, when Domaines Barons de Rothschild (Lafite) acquired the property. The ambition was clear from the outset: a complete restructuring of the vineyard, replanting from scratch and rebuilding the estate's identity around quality rather than volume. It was a long-term commitment of the kind that only a proprietor with genuine conviction — and the means to match — could undertake in an appellation that was still finding its feet on the international stage.
Terroir: sandstone, slope and southern sun
The vineyards of Château d'Aussières sit on two distinct soil types that together define the character of the wines. On the upper slopes, the soils are shallow and stony sandstone — poor, well-drained, forcing the vines to root deeply in search of water and mineral sustenance. Lower down the hillside, the soils become deeper and sandier, offering a different register of ripeness and texture. The entire vineyard is arranged in a broad south-facing amphitheatre, sheltered by the contreforts of Fontfroide, which concentrates warmth and light across the growing season.
The grape varieties are those of the Languedoc-Roussillon at its most classical: Syrah, Mourvèdre, Grenache, Carignan and Cinsaut for the reds and rosés, with white varieties completing the range. This is a Mediterranean palette worked with discipline, each variety planted on the parcel best suited to its character.
HVE certification and a commitment to the land
Château d'Aussières holds HVE (Haute Valeur Environnementale) certification, the French framework for high environmental value in viticulture. This reflects a broader commitment to sustainable management across the 167-hectare estate — from biodiversity and water management to the reduction of inputs in the vineyard. It is a meaningful step for a property of this scale in the Corbières, and one that aligns with the direction DBR Lafite has taken across its portfolio.
The wines: red, white and rosé across the Corbières appellation
Château d'Aussières produces wines in all three colours under the Corbières AOC, offering a coherent and well-defined range:
- Red: The flagship of the estate, built on Syrah, Mourvèdre, Grenache and Carignan — structured, sun-warmed and suited to the cellar, with the depth that the sandstone terroir of Fontfroide can deliver.
- Rosé: Fresh and precise, drawing on the aromatic potential of Cinsaut and Grenache, with the balance that comes from careful vineyard management and a south-facing aspect.
- White: A less common expression in the Corbières, but one that benefits from the estate's elevation and the cooling influence of the Fontfroide hills.
Why we have selected Château d'Aussières
We have listed Château d'Aussières because it represents something genuinely worthwhile in the Corbières: a large estate run with the rigour and long-term thinking that the appellation deserves, backed by the expertise of DBR Lafite without losing its southern identity. The sandstone terroirs of Fontfroide give the wines a mineral tension that sets them apart from more generously built Languedoc reds, and the HVE certification reflects a seriousness about the land that we find reassuring.
We recommend these wines to enthusiasts who appreciate the Languedoc-Roussillon at its most structured — those who enjoy exploring appellations beyond the familiar names and who are happy to give a bottle time in the cellar. At the table, the reds pair well with slow-cooked lamb, wild boar or a well-aged hard cheese; the rosé is a natural companion to grilled fish or a summer spread of charcuterie.
