Based in Saint-Jean-de-Fos in the Hérault, Domaine Fons Sanatis cultivates 7 hectares under certified organic farming on the ancient soils of the Languedoc. Benoît Braujou, the third generation of a vigneron family, returned in 2003 to work the family land near Aniane — alone, with draught horses, and with a commitment to old varieties: Aramon, Carignan, Grenache, Mourvèdre, Syrah, and Vermentino. Choosing Vin de France over AOC, he refuses frameworks he considers too restrictive, prioritising freedom in the vineyard and the cellar. At Halles Quercamps, we have selected this estate for the integrity of its approach: painstaking manual viticulture, mastered yields, and red and white wines of rare frankness for the region. A discreet address we are genuinely proud to list.

Domaine Fons Sanatis represents a demanding and deeply personal vision of the Languedoc: seven hectares farmed alone, with horses, under organic certification, by a vigneron who has chosen the freedom of Vin de France over the comfort of a recognised appellation.

A return to the family land in the Hérault

Benoît Braujou did not arrive at Saint-Jean-de-Fos by chance. The grandson and great-grandson of vignerons, he returned in 2003 to cultivate the family's land on the outskirts of Aniane — a village in the Hérault that has become one of the most quietly watched addresses in the Languedoc-Roussillon. Where others might have sought a fresh start elsewhere, Braujou chose continuity: to take what three generations had built and carry it forward on his own terms. That decision has shaped everything about Domaine Fons Sanatis, from the scale of the holding to the way each vine is tended.

Seven hectares, one man, and a pair of horses

The estate covers 7 hectares, worked entirely by Braujou himself. Draught horses replace the tractor in the vineyard rows, reducing soil compaction and preserving the biological life of the land — a choice that is as practical as it is philosophical. The grape varieties planted reflect the deep history of the Languedoc: Aramon and Carignan sit alongside Grenache, Mourvèdre, and Syrah for the reds, while Vermentino provides the foundation for the whites. These are not fashionable varieties chosen for the export market; they are the varieties that belong here, that have shaped the character of this corner of the Hérault for generations.

Certified organic, and proudly outside the AOC

The estate holds certified organic (Agriculture Biologique) status — a formal recognition of practices that Braujou has applied from the outset. Equally significant is his decision to label his wines as Vin de France rather than seeking AOC Languedoc classification. This is not a commercial compromise but a deliberate stance: the AOC framework, he considers, imposes constraints on grape varieties and winemaking that sit uneasily with his approach. Vin de France gives him the latitude to work with Aramon, to blend as he sees fit, and to let the wines speak for the land rather than for a regulatory specification.

The wines of Domaine Fons Sanatis

The estate produces both red and white wines, all released under the Vin de France designation. Across the range, the hallmarks are consistent: precise fruit, a sense of place, and the kind of directness that comes from low intervention in both vineyard and cellar.

  • Reds — built on Carignan, Grenache, Mourvèdre, Syrah, and the rare Aramon; structured yet approachable, with the garrigue-inflected character of the southern Languedoc.
  • Whites — drawn principally from Vermentino; fresh, mineral, and well-suited to the warmth of the Hérault terroir.

Why we have selected Domaine Fons Sanatis

At Halles Quercamps, we are drawn to producers who make clear choices and stand by them. Benoît Braujou does precisely that. Working alone across 7 hectares, farming organically with draught horses, and refusing the AOC in favour of genuine creative freedom — these are not marketing positions but convictions that show in every bottle. The wines carry a frankness and a sense of origin that is increasingly rare in a region where volume and appellation compliance can too easily become the primary drivers.

We recommend these wines to enthusiasts who value the human story behind a label, who appreciate old Languedoc varieties handled with care, and who enjoy discovering addresses that remain genuinely under the radar. At the table, the reds pair well with slow-cooked lamb, grilled aubergine, or a well-aged sheep's cheese from the nearby Hérault hills; the whites are excellent with grilled fish, goat's cheese, or simply on their own as an aperitif on a warm evening.
