In the mouth

Maceration of 3 to 4 weeks in concrete vats with submerged cap management. Ageing 6 months in concrete vats. No filtration prior to bottling.

DOMAINE FONS SANATIS

Based in Saint-Jean-de-Fos in the Hérault, Domaine Fons Sanatis cultivates 7 hectares under certified organic farming on the ancient soils of the Languedoc. Benoît Braujou, the third generation of a vigneron family, returned in 2003 to work the family land near Aniane — alone, with draught horses, and with a commitment to old varieties: Aramon, Carignan, Grenache, Mourvèdre, Syrah, and Vermentino. Choosing Vin de France over AOC, he refuses frameworks he considers too restrictive, prioritising freedom in the vineyard and the cellar. At Halles Quercamps, we have selected this estate for the integrity of its approach: painstaking manual viticulture, mastered yields, and red and white wines of rare frankness for the region.
