On the eye
Pale yellow robe with golden glints. Fine, persistent mousse.
On the nose
Floral and fresh on the nose, with white fruit aromas—white peach and citrus blossom—that speak to the Colombard's aromatic character and the Ugni-blanc's mineral clarity.
In the mouth
Fine, elegant bubbles deliver a well-balanced palate. The structure is crisp without harshness; the finish clean and refreshing, with a lingering floral note.
This is an honest pétillant—unpretentious, but made with care. The Blanc de Blancs approach suits the blend perfectly: no red fruit to muddy the waters, just the pure expression of two complementary white varieties. I'd serve it as an apéritif, certainly, but it's equally at home with lighter seafood dishes or as a palate-cleanser through a meal. A wine that knows its place and does it well.
