In the mouth
Powerful, opulent palate with fine, tightly woven tannins. The wine shows excellent structure and grip, with a long finish marked by liquorice, anise, and a savoury, peppery persistence.
On the nose
Intense spice-driven aromatics dominate: black pepper, clove, and dried herbs typical of the appellation. Beneath, darker notes of garrigue and a subtle mineral edge.
On the eye
Deep garnet, with a rim that hints at maturity and concentration.
Breeding
8 to 14 months in oak vat
M. Francois
I find Haute Pierre particularly rewarding with game civets and meat-based terrines—the wine's savoury depth and fine tannin structure complement these dishes admirably. A classic Châteauneuf that speaks to the house's long commitment to the appellation. Well worth laying down for another decade or more.
