In the mouth
Full and harmonious. Fresh fruit character is grounded by keen mineral precision and a refreshing acidity. The palate has real substance, with good weight sustained by lively tension. Long, persistent finish with excellent aromatic length.
On the nose
Expressive and layered. Opens with carambola and green mango, then reveals menthol and citrus notes that evolve throughout the tasting. Complex without being showy.
On the eye
Pale golden hue with bright, luminous reflections. Clean and inviting appearance.
Breeding
14 months' élevage in 600-litre demi-muids
M. Francois
I find Jadis particularly rewarding with dishes that marry savoury and sweet elements. A roasted chicken supreme with honey and rosemary shows it to fine advantage; equally, grilled sea bass with fennel allows its mineral character to shine. It's a wine that enhances rather than dominates the table.

Domaine Henri Bourgeois is a family wine estate in the Sancerre and Pouilly-Fumé appellations (Loire Valley). Founded in 1950. Around 72 hectares. Grapes: Sauvignon Blanc (whites) and Pinot Noir (reds). Cuvées: La Bourgeoise, La Demoiselle de Bourgeois, d'Antan. Flint, limestone and clay soils. Also owns Clos Henri in Marlborough, New Zealand.
