A legendary Roussillon domaine of substance and finesse

  • This wine possesses considerable structure and flesh. The palate shows the characteristic density of the finest Roussillon reds, with a framework that rewards patience in the cellar.
  • Silky tannins and surprising length characterise the finish. The wine balances power with elegance—a hallmark of Gauby's approach to organic viticulture in the Pyrenean foothills.
  • Excellent cellaring potential. The vintage and terroir suggest this wine will develop complexity over the next 10–15 years, rewarding those who lay it down.

In the mouth
The attack is supple and fruit-forward, with red berry character and gentle spice. The mid-palate shows good weight, whilst the finish remains fresh and persistent.
On the nose
Ripe cherry and red fruit dominate, with floral notes and a subtle mineral undertone. The bouquet is open and inviting, without excessive oak.
On the eye
Deep ruby, with the intensity typical of low-yielding, mature vines.
Breeding
Large and small oak casks. 30 months' ageing
M. Francois
I recommend this wine with game—venison and wild boar are natural partners. The structure and acidity cut through rich sauces beautifully. It is also excellent alongside aged cheeses or a simple cassoulet. Decant 30 minutes before serving if drinking within five years; otherwise, lay it down undisturbed. A wine that improves steadily in bottle.
