Forty-five hectares of old vines, schist and limestone, marine influence.

  • Domaine Gauby lies 20 kilometres north-west of Perpignan, commanding 85 hectares of which 45 are planted to vines aged up to 120 years. The vineyard sits at 150–200 metres altitude, overlooking the Mediterranean some 20 kilometres to the east, benefiting from significant maritime influence.
  • The terroir comprises sedimentary limestone to the north and primary schist to the south, often interwoven in vertical strata. This geological complexity encourages deep rooting and contributes to the wine's aromatic character and structure.
  • Certified organic viticulture. Sourced directly by Les Halles de Quercamps, offering authentic Roussillon character at a fair merchant's price.

Breeding
10 months' élevage in 500L barrels, large wooden vats and concrete tanks, then 10 months in bottle at the estate
On the eye
Deep ruby red.
On the nose
Striking intensity of fresh dark berries, liquorice and garrigue, with notes of white pepper and wild herbs characteristic of the Roussillon scrubland.
In the mouth
Elegant fruit expression with fine, well-defined tannins and a long, satisfying finish. Good structure and balance throughout.
M. Francois
I recommend this wine with wild mushroom risotto, braised wild boar, Catalan daube, or jambon braisé. The garrigue notes and mineral backbone make it equally at home with roasted game or slow-cooked Mediterranean vegetables. A genuine expression of old-vine Roussillon terroir.
