Pure mineral expression from Roussillon's oldest vines

  • This white wine from Domaine Gauby draws its character from old-vine parcels in the heart of Roussillon. The terroir imparts remarkable complexity and minerality, making it a wine of genuine substance and distinction.
  • A blend of Mediterranean varieties—Grenache Blanc, Macabeu, Vermentino, with a touch of Chardonnay—creates an elegant, vibrant wine. It balances freshness with richness, offering both structure and approachability.
  • Equally at home with refined seafood, grilled fish, or goat's cheese, this wine rewards contemplative drinking on its own. Its aromatic purity and mineral character appeal to those who appreciate structured white wines.

In the mouth
Crisp and crystalline on the palate. White stone fruits and citrus lead to a saline finish that brings freshness and length.
On the nose
Delicate and layered: white flowers, citrus and pear, with mineral and saline notes that speak clearly of its terroir.
On the eye
Pale yellow with golden reflections, bright and luminous.
Breeding
Aged in stainless steel and oak barrels for approximately 8 to 10 months, to develop complexity whilst preserving its natural freshness
M. Francois
A refined and authentic expression of Roussillon's terroir. The minerality and freshness are precisely what I look for in a structured white from this region. The old vines give it real presence without heaviness. For anyone seeking an elegant, food-friendly white with character, this is a wine worth discovering.
