Breeding
Ageing on lees: Exceeding 3 years (often 4 to 5 years for the Prestige cuvée), allowing yeast and brioche aromas to develop fully. Reserve wines: Use of quality reserve wines to ensure consistency of style and wine depth.
On the eye
Pale gold with fine, persistent bubbles. Clear and bright, characteristic of Grand Cru fruit.
On the nose
Expressive and refined. White flowers and citrus notes emerge first, followed by subtle brioche and almond from the élevage. The bouquet develops with air, revealing mineral complexity.
In the mouth
Balanced and elegant. Crisp acidity frames ripe fruit flavours—green apple, lemon zest—with a creamy mid-palate. The finish is clean and persistent, with a fine mineral grip.

This is a fine example of what Grand Cru Champagne should be: restrained power rather than bombast. The terroir speaks clearly—chalky minerality underpins the fruit, and the dosage is judicious. I'd recommend it not only as an aperitif, but alongside a plateau de fruits de mer, where its acidity and salinity find their perfect partner. A wine that rewards patience in the glass.

The Houry family has cultivated this small holding across several generations, working Chardonnay and Pinot Noir to produce grower Champagnes of genuine terroir character. At Halles Quercamps, we have selected this House for the precision of its Grand Cru parcels, the typicity of Ambonnay's chalk soils, and the integrity of a family operation working at truly human scale. These are grower Champagnes that speak first and foremost of their village, far removed from the blended anonymity of large-scale négoce.
