Vines averaging 70 years old

  • A wine distinguished by its suppleness and freshness rather than sheer power. The fruit vibrates with purity, the tannins remain refined, and the overall character favours elegance and finesse—a Châteauneuf-du-Pape in the more restrained Burgundian idiom.
  • The mineral backbone and spiced notes make this particularly suited to lamb cutlets grilled over vine cuttings, roasted guinea fowl, or Moroccan-style chicken tagine. A versatile companion to the table.
  • Decanter has noted its rather Burgundian style—a departure from the heavier expressions of the appellation, prioritising aromatic clarity and textural finesse over brute power.

On the eye

Robe rouge violine, avec des reflets brillants et une couleur légèrement velours

On the nose

On y retrouve la signature de la garrigue (ciste, thym) mais avec une grande pureté minérale. Fruits noirs, de poivre

In the mouth

Spread across 13 hectares at Courthézon, in the heart of the Châteauneuf-du-Pape appellation, Domaine de Panisse takes its name from a Provençal manor house dating to 1472. Acquired in April 2020 by the Vacheron family — already well regarded at Clos du Caillou — the estate is now farmed under full organic and biodynamic certification, across a mosaic of quartzite galets roulés, sand and clay-limestone soils planted to Grenache, Mourvèdre, Syrah and Cinsault. At Halles Quercamps, we have selected this estate for the rigour of its biodynamic conversion, the character of its reds and the coherence of a project carried by a family whose standards we know well. A Châteauneuf-du-Pape to follow closely.
