12 to 18 months in large wooden vats of 12 and 25 hectolitres (no new oak to avoid excessive woodiness).
On the eye
Deep ruby-red, limpid, with violet reflections in youth; evolving towards garnet with age.
On the nose
Wild red and dark berries—raspberry, blackcurrant, blackberry—interwoven with pronounced minerality: flint, graphite. Floral notes of violet and faded rose, white pepper and liquorice, without herbaceous character.
In the mouth
Pure, direct attack with remarkable energy. Silken texture throughout. Tannins of exceptional finesse, almost powdery, a gift of the vines' advanced age and biodynamic cultivation.
