Breeding
In concrete and stainless steel vats to preserve the purity of the fruit and expression of the terroir.
On the eye
Clear ruby red with good depth of colour.
On the nose
Mineral notes emerge first, followed by white pepper, black olive and a hint of tobacco leaf. The aromatics are restrained and precise rather than showy.
In the mouth
The palate is supple and well-balanced, with cherry and red fruit flavours supported by fine tannins. A subtle menthol note appears on the finish, adding complexity and length.
M. Francois
This wine suits traditional Languedoc fare—cassoulet, daube, blanquette—as well as dishes with warm spices such as curry and cumin. Its organic credentials and measured approach to extraction make it an intelligent choice for those seeking authenticity without artifice.

BORIE DE MAUREL

Borie de Maurel is established at Félines-Minervois, on the lower slopes of the Montagne Noire, farming 35 hectares of clay-limestone and schistous soils under certified organic management. Founded in 1989 by Michel Escande — a former sailing instructor turned vigneron — the estate swiftly became one of the most respected names in Minervois, earning international press recognition for its cuvée Sylla as early as the 1990s. At Halles Quercamps, we have selected this estate for the precision of its blends, the honest expression of its contrasting terroirs, and the rigour with which the Escande family has pursued organic viticulture across three decades. A reliable address for anyone seeking Minervois at its most accomplished.
