Breeding
Malolactic fermentation completed in full and eight months' ageing in temperature-controlled stainless steel vats.
On the eye
Pale golden yellow with brilliant clarity
On the nose
Mineral and iodine-driven, with hints of liquorice and lemon zest. Delicate floral notes suggest camomile and dried herbs, characteristic of old-vine Chablis.
In the mouth
Marked by calcerous minerality and good structure. The palate is dry and precise, with a lingering finish that echoes citrus and liquorice. The wine has backbone without heaviness.

This Petit Chablis shows its best with oysters, crab, and other shellfish—the mineral salinity of the wine mirrors the sea. Sushi and sashimi are excellent partners. It also suits frog's legs, a classic Burgundian pairing. Serve chilled, around 10–12°C, to allow its subtleties to emerge.

Vignoble Dampt Frères is a family wine estate in Collan, in the Chablis vineyard (Burgundy). Grape: Chardonnay exclusively. Kimmeridgian soils (clay and limestone). Appellations: Chablis, Petit Chablis, Chablis Premier Cru, Irancy. Around 35 hectares of vines. Stainless-steel vinification to preserve freshness and minerality.
