DOMAINE GAVOTY
Propriété familiale reprise en 1985 par Roselyne Gavoty (8ème génération), descendante directe de Philémon Gavoty. Le domaine Gavoty est localisé sur des sols du Trias, (plateau Triastique). Le vignoble est planté dans le calcaire et l’argile. Ces argiles sont dotées d’une capacité de rétention d’eau permettant au vignoble une meilleure résistance à la sècheresse. La garrigue sèche et sévère jouxte les vignes, seule tache luxuriante en plein été. L’ensemble du vignoble est constitué d’un seul tenant sur 46 ha et de 150 ha de bois. La production du domaine Gavoty est de 250.000 bouteilles par an, dont 70% à 80% de vins Rosé, 15% de Blanc et 8 à 15% de Rouge (suivant les millésimes). Il se situe en totalité sur la commune de Cabasse. Le vignoble est en conversion bio depuis 2018.
