A versatile food wine of considerable merit. Pairs beautifully with roasted red meats, game dishes, and aged goat's cheese. The structure and freshness make it equally suited to lighter preparations. Best enjoyed at 16–17°C.

Established at Cravant-les-Coteaux in the heart of the Chinon appellation, Domaine Philippe Alliet farms 17 hectares of Cabernet Franc and Chenin Blanc across clay-limestone, clay-siliceous and gravelly soils on south-facing slopes. Philippe Alliet, third generation of the family, took over in 1978 and forged a quietly influential style through the 1990s; his son Pierre joined him in 2005, strengthening a lineage built on precision rather than fashion. At Halles Quercamps, we have selected this estate for the rigour of its approach — biodynamic practices followed without the pursuit of certification — and for the clarity with which its wines articulate the distinct facets of the Loire terroir. A reliable address for those who want Chinon as it truly is.
