Ageing in oak foudres of 25 to 60 hectolitres for 18 months
On the eye
Pale yellow with golden glints
On the nose
Expressive and inviting, with white flowers to the fore—acacia and hawthorn—underpinned by subtle citrus and stone fruit notes that develop with aeration.
In the mouth
Crisp and lively on the attack, with good tension and a satisfying amplitude. The palate is clean and mineral, finishing with a persistent, refreshing acidity that lingers pleasantly.
M. Francois
This wine pairs beautifully with poached chicken in a light cream sauce with tarragon, or with roasted vegetables dressed simply with olive oil. It is equally at home with grilled fish, particularly sea bass or turbot. The wine's freshness complements delicate herb-based dishes and makes it an excellent aperitif wine.
