Breeding
Ageing in oak foudres of 25 to 60 hectolitres for 18 months
On the eye
Pale salmon-pink with delicate copper glints
On the nose
Refined and expressive: white stone fruits—peach and apricot—mingled with subtle herbal notes and a mineral undertone characteristic of the appellation
In the mouth
Crisp attack, then a broad, well-defined palate with good acidity and fine tannin structure. The finish is clean and persistent, leaving no doubt this is a serious food wine
I find this particularly fine with roasted poultry dressed in gentle spices, or with Mediterranean vegetables—aubergine, courgette, tomato. It also partners beautifully with fish-based bouillabaisse. The structure means it won't fade alongside properly seasoned dishes. A Bandol rosé of this calibre is a pleasure to recommend.
