Breeding
Aged in large oak vats and demi-muids for 15 to 18 months
On the eye
Deep ruby colour with garnet undertones
On the nose
Aromas of dark red and black fruits, with white pepper and subtle herbal notes. A restrained, mineral quality suggests the granite soils of the appellation.
In the mouth
The palate opens with black fruit character, supported by fine-grained tannins and a cool, slightly peppery finish. Liquorice and menthol notes provide complexity without dominating.
Young, this wine pairs naturally with charcuterie and roasted pork. After three to five years in bottle, the tannins soften considerably, revealing greater elegance alongside richer meats: duck breast, lamb shoulder, or venison. A wine that rewards patience.

Domaine Faury is a family wine estate in Chavanay (Loire), Condrieu and Saint-Joseph appellations (Northern Rhône Valley). Run by Lionel Faury. Around 12 hectares on granitic hillsides. Grapes: Viognier (Condrieu), Syrah (Saint-Joseph). Parcel-by-parcel vinification in tank and barrel. Elegant, aromatic terroir wines. Available at Les Halles de Quercamps.
