Breeding
Ageing in large wooden vats and demi-muids for 15 to 18 months
On the eye
Dark ruby robe with good intensity
On the nose
Wild red and black fruits are complemented by subtle spice notes and a savoury, meaty undertone. The bouquet develops with air.
In the mouth
The palate opens with dark forest fruits, developing into mentholated and liquorice-tinged notes. The wine shows good character and balance, with a persistent finish.
In its youth, pair with artisanal charcuterie or quality pork and veal. After several years of bottle age, the wine's structure will support more assertive dishes: grilled duck breast, lamb shoulder or leg. The wine will continue to develop for a decade or more.

Domaine Faury is a family wine estate in Chavanay (Loire), Condrieu and Saint-Joseph appellations (Northern Rhône Valley). Run by Lionel Faury. Around 12 hectares on granitic hillsides. Grapes: Viognier (Condrieu), Syrah (Saint-Joseph). Parcel-by-parcel vinification in tank and barrel. Elegant, aromatic terroir wines. Available at Les Halles de Quercamps.
