M. Francois
I find this wine particularly well-suited to traditional French charcuterie—the soft structure and aromatic profile complement cured meats beautifully. The organic farming speaks to the purity of fruit here. A genuine expression of Languedoc's potential, without pretension.

FAMILLE FABRE

Based in Luc-sur-Orbieu in the Aude, Famille Fabre has worked the stony terraces at the foot of the Alaric massif under the Languedoc appellation for sixteen unbroken generations since 1605. Long before organic viticulture became fashionable in the South of France, Louis Fabre committed to certified organic farming in 1991 — a decision that shaped the estate's identity. Today he is joined by his daughters Clémence, Jeanne and Paule. In 2020, the Guide Hachette named him Winemaker of the Year. At Halles Quercamps, we have selected this estate for the rigour of its organic and HVE-certified viticulture, the depth of its Syrah, Grenache and Carignan reds, and a family project rooted in its terroir for over four centuries. A benchmark of contemporary Languedoc.
