Breeding
Ageing on lees in 600-litre demimuids, 2,500-litre foudres for 10 months, stainless steel and concrete egg vessels
On the eye
Pale gold with a bright, clean appearance and subtle green reflections.
On the nose
White flowers—camomile and mimosa—lead to stone fruit: peach, melon and mandarin. The bouquet develops towards hints of precious wood and soft spice.
In the mouth
Well-balanced between body and freshness. White stone fruits and citrus dominate the palate. A pronounced saline minerality drives the finish with clean, lingering precision.
This is a wine of quiet competence. The 2021 shows the organic farming practices have not compromised structure or flavour—indeed, they seem to have sharpened the mineral edge. It's neither showy nor anonymous. For a Côtes de Provence blanc, it offers genuine character and food-friendliness. I'd recommend it to anyone seeking a reliable, unpretentious white for everyday pleasure or modest entertaining.

CHÂTEAU MALHERBE
Set across 25 hectares of south-facing coastal slopes at Bormes-les-Mimosas, Château Malherbe produces red, white and rosé wines under the Côtes de Provence appellation. Originally a farm attached to the Fort de Brégançon, the estate was acquired by Louis Ferrari in 1935 and has been guided since 2007 by Sébastien Ferrari, who steered it towards Demeter-certified biodynamic viticulture — deepened in 2020 by the arrival of Burgundian winemaker Philippe Pacalet. At Halles Quercamps, we selected this estate for the rigour of its biodynamic conversion, the diversity of its soils — silver schist, red clay, sandy alluvium and quartz — and the aromatic precision this mosaic of terroirs yields. A Provence address well worth the attention of discerning amateurs.
