In the mouth
Structured and distinctly mineral, with an unctuous texture that carries flavours of coconut, lime, brioche and anise. Saline and mineral notes provide definition and a lingering finish.
On the nose
A complex aromatic tapestry: lime zest, anise and dill mingle with white peach, honeyed notes and a subtle toasted character. The nose evolves with time in glass.
On the eye
Pale gold, with a luminous quality that suggests the Mediterranean light of its origin.
Breeding
12 months' ageing: half in new oak barrels and half in one-year-old barrels with lees stirring

Domaine Gauby is a wine estate in Calce (Pyrénées-Orientales), Roussillon. Run by Gérard and Ghislaine Gauby. Around 45 hectares farmed biodynamically. Grapes: Grenache, Carignan, Syrah, Mourvèdre, Macabeu. Appellations: Côtes du Roussillon Villages, IGP Côtes Catalanes. Cuvées: Muntada, Vieilles Vignes, Coume Gineste. One of the great names of Roussillon.
