Breeding
Twelve months' élevage in stainless steel tanks (or large old wooden vessels depending on the vintage) to stabilise the wine without imparting new oak aromas

Brilliant ruby robe with garnet highlights
On the nose
Intense bouquet of ripe red fruits with subtle herbal undertones. The aromatics are inviting and expressive, characteristic of the Côtes Catalanes terroir.

The palate unfolds with stewed red fruits, particularly blackberry, alongside delicate notes of bay leaf and thyme. The tannins are rounded and well-integrated, leading to a clean finish with hints of redcurrant.

DOMAINE SOLPAYRE
Domaine Solpayre is a wine estate in Roussillon (Languedoc-Roussillon). The estate works Mediterranean grape varieties such as Grenache, Syrah, Carignan and Mourvèdre on the schist and granite soils typical of the region. The wines capture the warmth of the Catalan terroir and the freshness brought by altitude. Available at Les Halles de Quercamps.
