A measured harmony of spice and fruit

  • This Roussillon red reveals surprising spiced notes that frame the wine's character without overwhelming it. Clove and pepper lead to darker fruit and herbal nuances, creating a wine of genuine complexity and restraint.
  • The palate is fresh and suave, with notably soft tannins that suggest careful winemaking. The finish is sustained, rewarding those who appreciate wines built for contemplation rather than mere consumption.
  • Domaine Sol Payre practises respectful viticulture, allowing the terroir of Roussillon to express itself naturally. The result is a wine that reflects its place without artifice.

Product features : Domaine Sol Payre Cotes du Roussillon Insolentia 2016 — Côtes du Rhône Villages

In the mouth
The attack is spiced, with clove and pepper leading. Bay leaf and black cherry follow, supported by velvety tannins. The wine is fresh and suave on the palate, with a satisfying length that speaks to balanced winemaking.
On the nose
The bouquet mingles sweet spices—cinnamon and bay leaf—with eau-de-vie cherry and raspberry liqueur notes. Aromatic complexity unfolds gradually rather than announcing itself.
On the eye
Brilliant garnet robe with good depth of colour
Breeding
Ageing for 10 months in oak barrels. Bottled to continue its élevage.
M. Francois
This wine finds its natural home with red meats—beef and game particularly—where its spiced character and soft structure complement rather than compete. It would also suit duck and richer poultry preparations. Decant thirty minutes before service to allow the aromatics to develop fully.
