Certified organic Languedoc Chardonnay with mineral character

  • Cultivated across diverse soil types within a certified organic domaine, this wine expresses the complexity that comes from terroir variation. The limestone-rich vineyard imparts distinctive mineral qualities to the finished wine.
  • A Chardonnay from Languedoc-Roussillon offers an intriguing departure from the expected. This wine demonstrates how southern French viticulture can produce refined, food-friendly whites with genuine character and freshness.
  • Named after gypsum—the brilliant white mineral found in the vineyard—this wine carries the stone's luminosity through to the glass. The mineral signature persists from soil through to the wine's elegant, bright finish.

In the mouth
The palate delivers refreshing acidity balanced by the mineral backbone that gypsum-rich soils provide. A saline, slightly flinty quality persists, with white stone fruit flavours that linger pleasantly through the finish.
On the nose
An immediate burst of exotic fruit character—pineapple and passion fruit—with underlying white flower notes. The bouquet is clean and inviting, reflecting the wine's organic provenance and careful winemaking.
On the eye
Pale, limpid and bright
M. Francois
This is a wine that stands confidently alone, requiring no accompaniment to reveal its character. The tasting experience proves disarming—a Languedoc Chardonnay that challenges preconceptions about regional style. The organic farming practices are evident not in marketing claims, but in the wine's natural balance and subtle complexity. Genuinely thought-provoking.

BORIE DE MAUREL

Borie de Maurel is established at Félines-Minervois, on the lower slopes of the Montagne Noire, farming 35 hectares of clay-limestone and schistous soils under certified organic management. Founded in 1989 by Michel Escande — a former sailing instructor turned vigneron — the estate swiftly became one of the most respected names in Minervois, earning international press recognition for its cuvée Sylla as early as the 1990s. At Halles Quercamps, we have selected this estate for the precision of its blends, the honest expression of its contrasting terroirs, and the rigour with which the Escande family has pursued organic viticulture across three decades. A reliable address for anyone seeking Minervois at its most accomplished.
