In the mouth
Ample and fleshy, with good juiciness and structure. The mid-palate shows ripe red fruit and gentle tannins. Fine length on the finish, with a mineral undertone typical of the appellation.
On the nose
Open and layered. Blackcurrant bud and violet emerge first, followed by a measured oak and vanilla character that integrates rather than overwhelms. The bouquet develops with air.
On the eye
Clear ruby, bright and well-defined
This wine suits roasted game birds—particularly guinea fowl—and beef dishes of moderate richness. A tournedos, simply prepared, would be an excellent match. Serve at 15–16°C to allow the wine's layered character to emerge fully. Approachable now, but will develop further over five to seven years.

Grapes: Pinot Noir (reds) and Chardonnay (whites). Appellations: Beaune, Beaune Premier Cru, Meursault, Gevrey-Chambertin. Organically farmed. Parcel-by-parcel vinification, oak-barrel ageing.
